Soft soothing foods

In a previous post I spoke about chemotherapy causing mouth sores which can make it difficult to eat or swallow. I have tried to think of soft foods combined with anticancer ingredients to make an edible nutritious meal for my Mom. A hand blender is also a useful kitchen appliance to own. Here are a few ideas with some recipe links below:

  • Carrot & sweet potato mash
  • Boiled gem squash
  • Carrot, leek & parsley mash
  • Tomato and onion gravy – soak 4 or 5 tomatoes in a bowl of boiling water for about 10 minutes. The tomato skins will eventually be easy enough to peel off. Saute a sliced onion in some olive oil. When ready add the softened tomatoes and leave to simmer for about 30 minutes. Season with a little salt and black pepper.
  • Soft scrambled eggs
  • Soft scrambled eggs with chopped up tomatoes and spring onions
  • Tofu stir fried with chopped up onions, ginger and garlic, you could also add spinach
  • 2 or 3 squares of dark chocolate melted over grated ginger
  • Mashed avocado
  • Mashed banana
  • Cauliflower soup – make your own chicken stock by boiling a whole chicken or chicken pieces and use the stock for the soup
  • Carrot and sweet potato soup
  • Butternut squash soup
  • Brown rice
  • Couscous
  • Hummus
  • Carrot juice
  • Green juice
  • Smoothies
There are also the unhealthy dairy and sugary options such as ice-cream, yoghurt, jelly and custard. But I guess when you’re struggling to eat, it is better to eat something rather than nothing as the most important thing is to keep your strength up and keep your immune system as high as possible.
